Coffaro '96 Cabernet Sauvignon

Hi!

It's T-Day and Willy and I decided to open a bottle of David's '96 Cabernet Sauvignon to enjoy with our Thanksgiving dinner.  And *ENJOY* we did!  This wine has mellowed into a classic Cab with a hint of the distinctive Cabernet Franc discernable to my palate.  The tannins are completely blended, but you can tell they were there.  The balance is superb!  (So what else have we come to expect of David's wines?)  To have this wine develop so well in just two-plus years gives me pause for consideration as to when I should first try the '97 Aca Modot in my stash.  I had planned to let it slumber for four or five years before tasting... now I'm not so sure.

Anyway, don't know how many of you out there that may read this still have David's '96 Cabernet (Doug?), but I think it is drinking well NOW!
